To ensure that your vegetarian diet contains adequate energy and nutrients:
- Include "meat alternates" in your diet, such as soy products and other legumes - a vegetarian who exists on pasta and grilled cheese sandwiches will probably be missing out on many healthful nutrients.
- Keep your intake of sweets and saturated fats to a minimum.
- Choose whole or unrefined grains instead of refined products whenever possible; use fortified enriched cereal products.
- Eat a wide variety of deep-colored fruits and vegetables, including a good source of vitamin C (needed to absorb iron from plant foods, especially iron-fortified breakfast cereals).
- Vegans should have a reliable source of vitamin B-12, such as a fortified breakfast cereal, soy beverage, or cyanocobalamin supplement.
- If milk is not consumed, a calcium + vitamin D supplement may be needed.
