Students and researchers at the University of Maine use the Dr. Matthew
Highlands Pilot Plant to do valuable research that is beneficial to the
food industry in the State of Maine and Nationwide. The research covers
a wide scope from seafood to blueberries, from potatoes to sausage.
There are a variety of applications that are being studied in the Pilot
Plant here at the University of Maine. |

Yo Bon Berry Bites
- 1st place winner in the
National IFT (Institute of Food Technologists) student competition.

Science and Human Nutrition Department's Student Product Development
Team, these treats are a delicious combination of luscious dark
chocolate and creamy wild blueberry yogurt. These tasty bon-bons
pull off a rare coup by blending the power of antioxidants and
calcium with a dreamy flavor that’s impossible to resist. |

Jian Kong is removing scales from
salmon trimmings
for his value added foods research, a part of his Graduate Studies
at the University of Maine. Jian often spends many hours, several
days a week working in the Pilot Plant to prepare his samples.

Undergraduate students in
a Food Science class,
Mary E. Thomas, Wyatt Marshall and Mostapha Aghamoosa
chose to do research on packaging methods to determine
optimum shelf life for their gluten free pizza dough recipe. |

Misty Cram, Graduate Student and Advisor Dr. Al Bushway are
utilizing the sausage making equipment and smokehouse for a Lobster
Pepperoni product. |
