Local Food Systems There is probably no better way to celebrate the quality of life than through food. Food is a fundamental basic core need - as critically important as sleep and water. Yet, while we obviously continue to hunger and require food, many of us no longer value food or the role it plays in our lives. If we want to rethink sustainability in our lives, we should start with rethinking the connection between food, family and community. Almost anyone who travels to Italy will be impressed by the quality of their food. But, how many people really take the time to try to understand why the food is so good. Yes, they are a mature culture, and they have had several thousand years to develop their quality cuisine. But, I think the key is the quality of the fruits and vegetables, the intensity of the flavor in the varieties that they have developed and saved for generations, that really affects the flavors of their food. In addition, Italians take the time for food. Quality food does take time to prepare, but this can be quality time spent with a friend or family member. I think that food in Italy is the glue that binds Italian families together. Around a table, multi-generational families come together and share in the real blessings of the earth. Not only do they get to enjoy their creative capacity, but it gives the families time to discuss issues, learn what is going on in their children's lives, and to spend quality time together. Quality food is a gift. It need not be gourmet quality to be good. A child with very little training can make a quality meal. It really requires someone taking the time, and flavorful quality ingredients. With this, a little practice, and healthy portion sizes, one should be on the way to a quality food experience.
